Hector
Originally from Kilarney in Ireland, Hector’s family moved to Oaxaca, Mexico when he was a wee lad. Hector is responsible for the vast array of culinary delights served at Finn McCool’s Irish pub, but feels his creativity and artistic license is being held back by the constant requests for Irish Stew with Guinness. Hector has worked for Geraldine since he was a baby in 1984, training at her flagship restaurant, Gilliland’s, also on Main Street. He still serves up some of her early famous delights such as the decadent Chocolate Boxes, Potato Parsnip Pancakes with Home-Made Gravlax and Sweet Potato Tortellini.
